Ingredients

1 pound (450g) cremini or button mushrooms, cleaned and halved

2 cups broccoli florets, washed and trimmed

4 tablespoons unsalted butter

4 cloves garlic, finely minced

1 tablespoon extra virgin olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

1 tablespoon fresh lemon juice

Zest of 1 lemon

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for roasting.

Prepare the Vegetables: In a large mixing bowl, combine the cleaned and halved mushrooms with the broccoli florets. Ensure they're well mixed for even coating in the next step.

Make the Garlic Butter: In a small saucepan, melt the unsalted butter over low heat. Once completely melted, stir in the minced garlic, fresh thyme, salt, and black pepper. Allow it to bubble gently for about 1-2 minutes, just enough for the garlic to release its fragrant aroma without browning.

Combine Ingredients: Pour the garlic butter mixture over the mushrooms and broccoli. Then drizzle in the olive oil, lemon juice, and lemon zest. Toss everything together thoroughly until the vegetables are beautifully coated in the aromatic mixture.

Spread on a Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup. Spread the coated mushrooms and broccoli in a single even layer to ensure proper roasting, avoiding overcrowding.

Roast the Vegetables: Place the baking sheet in your preheated oven. Roast the mixture for approximately 20-25 minutes, stirring halfway through the cooking time. The mushrooms should become golden brown, while the broccoli retains a tender-crisp texture.

Serve: Once the vegetables are done roasting, remove them from the oven and garnish with freshly chopped parsley for a pop of color and flavor. Serve hot as an enticing side dish or enjoy as a light main course!
