8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

3 tablespoons extra virgin olive oil, divided

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste for spice level)

1/2 cup white wine (such as Sauvignon Blanc or substitute with seafood broth)

Juice of 1 fresh lemon

Zest of 1 lemon

Salt and freshly cracked black pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Cook the Linguine: Fill a large pot with water, adding a generous pinch of salt, and bring it to a rolling boil. Once boiling, add the linguine pasta and cook according to the package instructions until al dente. After cooking, drain the pasta but reserve about 1 cup of the starchy pasta water for later use.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of the butter along with 2 tablespoons of olive oil. Add the shrimp to the skillet in a single layer and season with salt and freshly cracked black pepper. Sauté the shrimp for approximately 2-3 minutes on each side, until they are pink and opaque. Once cooked, remove the shrimp from the skillet and set them aside on a plate.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. When the butter has melted, stir in the minced garlic and red pepper flakes. Cook for about 30 seconds, stirring frequently, until the garlic is fragrant but not browned.

        Deglaze with Wine: Carefully pour the white wine into the skillet, using a wooden spoon to scrape up any flavorful brown bits stuck to the bottom of the pan. Allow the wine to simmer for 2-3 minutes, letting it reduce slightly.

If the pasta seems too dry, gradually add some of the reserved pasta water, a little at a time, until you achieve your desired creamy consistency.
