Ingredients

1 medium head of cauliflower, cut into bite-sized florets

4 cloves of garlic, finely minced

3 tablespoons extra virgin olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

Fresh parsley, roughly chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s ready for roasting.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, minced garlic, dried thyme, dried rosemary, smoked paprika, salt, and freshly cracked black pepper. Use your hands or a wooden spoon to toss the cauliflower thoroughly, ensuring each piece is well-coated with the oil and seasonings.

Arrange on a Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned cauliflower florets out in a single layer on the sheet, ensuring they have enough space between them for even roasting.

Roast the Cauliflower: Place the baking sheet in the preheated oven and roast the cauliflower for 25-30 minutes. Halfway through, give the florets a gentle toss to promote even browning. They should be golden, crisp-tender, and fragrant when done.

Garnish and Serve: Once roasted, carefully remove the baking sheet from the oven and allow the cauliflower to cool for a couple of minutes. Transfer the cauliflower to a serving platter, sprinkle with freshly chopped parsley for a pop of color, and arrange lemon wedges around the dish for that extra zing.
