Ingredients

12 oz. pasta (recommended: penne or fettuccine)

2 tablespoons extra-virgin olive oil

3 cloves garlic, finely minced

1 medium onion, finely chopped

2 fresh green chilies, finely chopped (adjust based on your spice preference)

4 cups fresh spinach leaves, washed and dried

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon red pepper flakes (optional, for added heat)

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta while reserving about 1 cup of the pasta water for later use.

Sauté Aromatics: In a large skillet over medium heat, warm the olive oil. Once hot, add the chopped onion and sauté until it becomes translucent and soft, roughly 3-4 minutes. Stir in the minced garlic and chopped green chilies, cooking for an additional 2 minutes until the mixture is fragrant.

Add Spinach: Gradually incorporate the fresh spinach into the skillet. Stir continuously until the spinach wilts down completely, about 3 minutes.

Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream, mixing well to combine with the sautéed vegetables. Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if you desire extra spice). Allow the sauce to simmer for approximately 5 minutes, letting it thicken slightly. If the sauce becomes too thick, add a little of the reserved pasta water until you reach your desired consistency.

Combine Pasta and Sauce: Add the drained pasta to the skillet containing the creamy spinach sauce. Gently toss the pasta to coat it evenly with the sauce. If necessary, stir in more of the reserved pasta water to ensure a smooth and creamy texture.

Serve: Plate the spicy green chili spinach pasta and finish with a garnish of fresh basil leaves. For an additional flavor boost, sprinkle with extra Parmesan cheese and a pinch of red pepper flakes, if desired.
