1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

1 tbsp olive oil

2 cups cooked brown rice or quinoa

1 can black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 avocado, sliced

1 cup cherry tomatoes, halved

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: sour cream, shredded cheese, salsa, or pico de gallo

Marinate the Chicken: In a large mixing bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Whisk together until well blended. Add the chicken breasts to the bowl, ensuring they are completely coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours for maximum flavor).

    Preheat the Grill: Heat your grill or grill pan over medium-high heat. While it's heating, remove the chicken from the marinade, allowing any excess marinade to drip off.
