2 cups fresh blueberries

2 cups ripe peaches, sliced

1 cup granulated sugar, divided

1 tablespoon lemon zest (freshly grated from a lemon)

1/4 cup freshly squeezed lemon juice

1 teaspoon pure vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup whole milk

1/4 cup unsalted butter, melted

Vanilla ice cream, for serving

Preheat your grill to medium heat (around 350°F/175°C). Prepare a grill-safe baking dish or a cast-iron skillet by lightly greasing it with butter or non-stick spray.

    In a large mixing bowl, add the fresh blueberries, sliced peaches, 1/2 cup of granulated sugar, lemon zest, fresh lemon juice, and vanilla extract. Gently toss these ingredients until they are well combined. Allow this mixture to marinate for about 15 minutes so that the flavors meld beautifully.

      In a separate bowl, whisk together the remaining 1/2 cup of sugar, all-purpose flour, baking powder, and salt until evenly mixed.

        Gradually add the whole milk and melted butter to the dry ingredients, stirring gently until just combined. Take care not to overmix; the batter should remain lumpy for a delightful texture.

          After the fruit has marinated, pour the fruit mixture into the prepared baking dish or skillet. Using a spoon, carefully dollop the batter over the fruit, spreading it gently to cover as much of the fruit as possible without disturbing it too much.
