Ingredients

4 pieces of flatbread (store-bought or homemade)

1 medium zucchini, sliced into 1/4-inch rounds

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup cherry tomatoes, halved

1 cup baby spinach leaves

1 cup mozzarella cheese, shredded

1/2 cup feta cheese, crumbled

1/4 cup pesto (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions

Prep the Grill: Begin by preheating your grill to medium-high heat, aiming for about 400°F (200°C). If you opt for a grill pan, place it on the stovetop over medium heat to warm up.

Grill the Veggies: In a large mixing bowl, add the sliced zucchini, red and yellow bell peppers, halved cherry tomatoes, and drizzle with olive oil. Season with dried oregano, salt, and pepper. Toss the vegetables together until they are evenly coated with the oil and spices. Transfer the mixture to the grill or grill pan, cooking for 5 to 7 minutes. Turn the veggies occasionally until they become tender and acquire a nice char. Once cooked, remove them from the grill and set aside.

Prepare the Flatbreads: Take each piece of flatbread and spread a generous tablespoon of pesto on top. Use the back of a spoon to evenly distribute it across the surface for maximum flavor.

Assemble the Pizzas: On each prepared flatbread, evenly distribute the grilled vegetable mixture. Sprinkle the shredded mozzarella cheese and crumbled feta cheese over the top, ensuring an even coverage.

Grill the Pizzas: Gently place each flatbread onto the grill, close the lid, and let them cook for approximately 4 to 5 minutes. Watch closely until the cheese is melted and bubbly. If using a grill pan, you might cover it with a lid to speed up the melting process.

Finishing Touches: After the cheese has melted to your liking, carefully remove the flatbreads from the grill. If desired, garnish with fresh basil leaves for a pop of color and flavor. Slice into wedges for easy serving.

Enjoy: Serve your Grilled Veggie Flatbread Pizzas immediately while they are hot and the flavors are at their peak. Each bite is a delightful medley of grilled goodness!
