Ingredients

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 bell pepper (choose your favorite color), diced small

1 small zucchini, diced small

1 cup corn kernels (you can use fresh, frozen, or canned)

1 small red onion, finely chopped

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Salsa and sour cream, for serving

Instructions

Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the finely chopped red onion and the minced garlic. Sauté for approximately 3-4 minutes until the onion becomes translucent and fragrant.

Add Remaining Veggies: Stir in the diced bell pepper, zucchini, corn, and chopped spinach. Incorporate the ground cumin, smoked paprika, salt, and pepper. Continue to cook for an additional 5-7 minutes, allowing the vegetables to soften and meld together. Remove the skillet from heat and let the mixture cool slightly.

Assemble Quesadillas: Lay a tortilla flat on a skillet or a clean surface. Spoon half of the veggie mixture onto one side of the tortilla, spreading it evenly. Generously sprinkle a blend of mozzarella and cheddar cheese over the veggies, then carefully fold the tortilla in half, encasing the filling.

Cook Quesadilla: Return the filled quesadilla to the skillet (adding a little more olive oil if necessary). Cook over medium heat for 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat this process with the remaining tortillas and filling, ensuring not to overcrowd the pan.

Cut and Serve: Once the quesadillas are cooked, transfer them to a cutting board and allow them to rest for about a minute. Slice each quesadilla into wedges and serve immediately with fresh salsa and a dollop of sour cream.
