Ingredients

1 lb ground turkey

8 oz cremini mushrooms, sliced

1 medium onion, finely chopped

2 cloves garlic, minced

2 tbsp olive oil

1 tbsp butter

1 cup chicken broth

1 cup sour cream

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

1 tsp paprika

Salt and pepper, to taste

8 oz egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the noodles: Bring a large pot of salted water to a boil. Once boiling, add the egg noodles and cook according to the package instructions until al dente, typically around 7-9 minutes. Drain the noodles thoroughly and set them aside.

Sauté the vegetables: In a large skillet, heat the olive oil and butter over medium heat until melted and hot. Add the chopped onion and sliced mushrooms to the skillet. Sauté them together for about 5-7 minutes, stirring occasionally, until the onions are translucent and the mushrooms are golden brown. After this, stir in the minced garlic and cook for another minute until it becomes fragrant.

Brown the turkey: Increase the heat to medium-high. Add the ground turkey to the skillet, using a spatula to break it up as it cooks. Cook for about 6-8 minutes, or until the turkey is nicely browned and fully cooked through. Season the mixture with salt, pepper, and paprika to taste.

Create the sauce: Lower the heat back to medium. Pour in the chicken broth, followed by the Dijon mustard and Worcestershire sauce. Stir well and allow the mixture to simmer gently for 2-3 minutes, letting the flavors meld together.

Add the sour cream: Remove the skillet from heat and stir in the sour cream until the sauce is smooth and creamy. Taste the sauce and adjust the seasoning with additional salt and pepper, if needed.

Combine and serve: Return the cooked egg noodles to the skillet, tossing them with the turkey and mushroom sauce. Make sure the noodles are thoroughly coated in the creamy sauce.

Plate and garnish: Serve the stroganoff hot, garnished with freshly chopped parsley to add a vibrant touch and enhance the flavors.
