Ingredients

1.5 lbs pork tenderloin

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon rosemary, finely chopped (fresh or dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the honey, Dijon mustard, apple cider vinegar, minced garlic, smoked paprika, and chopped rosemary. Season the mixture with salt and pepper. Whisk until all ingredients are thoroughly blended. Set aside approximately 1/4 of the marinade in a separate bowl for basting the pork later.

Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the tenderloin, ensuring it’s fully coated on all sides. Seal the bag or cover the dish tightly, and refrigerate it for a minimum of 1 hour. For the best flavor infusion, allow it to marinate for up to 8 hours.

Preheat the Oven: Before cooking, preheat your oven to 400°F (200°C) to ensure it’s ready for roasting.

Sear the Pork: In a large oven-safe skillet (cast iron works well), heat the olive oil over medium-high heat. Remove the pork from the marinade, shaking off any excess. Once the oil is hot, carefully place the pork tenderloin in the skillet. Sear it for about 3-4 minutes on each side, or until it develops a beautiful golden-brown crust.

Bake the Pork: After searing, take the reserved marinade and brush it generously over the top of the pork. Transfer the skillet to the preheated oven and roast the tenderloin for 20-25 minutes. Use a meat thermometer to check for doneness; the internal temperature should reach 145°F (63°C).

Rest and Slice: Once cooked, remove the skillet from the oven. Allow the pork to rest for 5-10 minutes to let the juices redistribute, ensuring a moist and flavorful tenderloin. After resting, slice the pork into medallions about 1-inch thick.

Garnish and Serve: Optionally, drizzle any remaining glaze over the sliced pork for added flavor. Garnish the dish with chopped fresh parsley for a pop of color. Serve these delightful pork medallions alongside your choice of sides such as roasted vegetables or creamy mashed potatoes for a complete meal.
