Ingredients

For the Lemon Herb Chicken:

4 boneless, skinless chicken breasts

1/4 cup extra virgin olive oil

3 tablespoons freshly squeezed lemon juice

Zest from 1 large lemon

3 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons fresh thyme, finely chopped

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

For the Wild Rice Pilaf:

1 cup wild rice blend (a mix of wild rice, brown rice, and white rice)

2 cups low-sodium chicken broth

1/2 medium onion, finely chopped

2 tablespoons olive oil

1 carrot, diced

1 celery stalk, diced

1/2 cup sliced mushrooms

1 teaspoon dried thyme

1 bay leaf

Salt and freshly ground black pepper, to taste

1/4 cup slivered almonds (optional, for garnish)

Instructions

Marinate the Chicken:

    - In a mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, chopped thyme, and a generous pinch of salt and pepper. Whisk until well blended.

      - Add the chicken breasts to the bowl, ensuring they are evenly coated with the marinade. Cover and let the chicken marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours for deeper flavor.

        Prepare the Wild Rice Pilaf:

          - Rinse the wild rice blend thoroughly under cold running water until the water runs clear; drain well.

            - In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 2-3 minutes until it becomes translucent.

              - Stir in the diced carrot, diced celery, and sliced mushrooms, cooking for an additional 3-4 minutes until the vegetables soften.

                - Add the rinsed wild rice blend, dried thyme, bay leaf, and low-sodium chicken broth. Increase the heat to bring the mixture to a boil.

                  - Once boiling, reduce the heat to low, cover, and let it simmer for about 45-50 minutes, or until the rice is tender and all liquid is absorbed. Remove the bay leaf before serving. If desired, stir in the slivered almonds for a delightful crunch.

                    Cook the Chicken:

                      - Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off.

                        - Grill or sauté the chicken for approximately 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). If desired, baste the chicken with any remaining marinade during cooking for enhanced flavor.

                          Assemble the Dish:

                            - Once the chicken and wild rice pilaf are both ready, plate the dish by serving the chicken on a generous bed of wild rice pilaf.

                              - Garnish each serving with a sprinkle of fresh parsley and additional lemon wedges on the side, if you like.

                                Enjoy:

                                  - Serve the dish warm and delight in the vibrant flavors of the zesty lemon and aromatic herbs perfectly complemented by the earthy, savory wild rice!
