1 block (14 oz) firm tofu

¼ cup extra virgin olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, finely minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon red pepper flakes (optional, for added heat)

Fresh parsley, chopped, for garnish

Prepare the Tofu: Press the tofu block to eliminate excess moisture. To do this, wrap the tofu in a clean kitchen towel and place a heavy pot or skillet on top. Allow it to sit for at least 30 minutes. After pressing, cut the tofu into ¾-inch thick steaks.

    Make the Marinade: In a medium-sized mixing bowl, combine the olive oil, fresh lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, sea salt, black pepper, and red pepper flakes (if using). Whisk together until all ingredients are well mixed and emulsified.

      Marinate the Tofu: Place the tofu steaks in a shallow dish and pour the marinade over them, ensuring each side is thoroughly coated. Cover the dish with plastic wrap or a lid and refrigerate for at least 30 minutes, or up to 2 hours for a more robust flavor infusion.

        Preheat the Grill: Before grilling, preheat your grill or grill pan to medium-high heat. If using a grill pan, lightly brush it with oil to prevent sticking.

          Grill the Tofu: After marinating, remove the tofu steaks from the dish, allowing any excess marinade to drip off. Place the steaks on the preheated grill. Grill each side for about 4-5 minutes, or until you see distinct grill marks and the tofu is heated through.
