6 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup fresh lemon juice (about 2 medium lemons)

Zest of 1 lemon

4 fresh garlic cloves, minced finely

2 tablespoons extra virgin olive oil

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and freshly cracked black pepper, to taste

Marinate the Chicken: In a large mixing bowl, whisk together the honey, fresh lemon juice, lemon zest, minced garlic, olive oil, thyme leaves, salt, and pepper until the mixture is smooth and well incorporated.
