Lemon Pepper Shrimp with Wild Rice

Ingredients
  

For the Shrimp:

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

Zest of 1 lemon (about 2 teaspoons)

2 tablespoons fresh lemon juice (from about 1 lemon)

2 teaspoons garlic, minced

1 teaspoon freshly cracked black pepper

1/2 teaspoon salt (adjust to taste)

1 tablespoon fresh parsley, chopped (for garnish)

For the Wild Rice:

1 cup wild rice, rinsed

3 cups vegetable or chicken broth

1 tablespoon olive oil

1/2 medium onion, finely chopped

1 clove garlic, minced

1 teaspoon thyme, dried or fresh

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh dill (optional, for garnish)

Instructions
 

Prepare the Wild Rice:

    - In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until they turn translucent and fragrant, about 3-4 minutes.

      - Stir in the rinsed wild rice, dried thyme, salt, and black pepper, ensuring everything is combined thoroughly.

        - Pour the vegetable or chicken broth into the saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 45-50 minutes, or until the rice is tender and has absorbed most of the liquid. After cooking, remove from heat and let it sit covered for an additional 10 minutes to fluff.

          Prepare the Shrimp:

            - While the wild rice is cooking, in a large mixing bowl, combine 3 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, cracked black pepper, and salt. Add the peeled and deveined shrimp to the bowl and gently toss until the shrimp are evenly coated. Allow the shrimp to marinate for about 10 minutes to absorb all the flavors.

              Cook the Shrimp:

                - Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet along with the marinade. Cook the shrimp for about 2-3 minutes on each side, or until they are pink and opaque in color. Be mindful not to overcook the shrimp, as they can become tough if left too long.

                  - Once cooked, remove from heat and sprinkle the shrimp with freshly chopped parsley for added flavor and color.

                    Serve:

                      - Fluff the cooked wild rice with a fork to separate the grains. Spoon generous portions of the herbed wild rice onto serving plates. Top each serving of rice with the zesty lemon pepper shrimp. If desired, garnish with fresh dill for an extra pop of flavor. Serve immediately and enjoy this delightful dish!
