Ingredients

8 large eggs

2 cups whole milk

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

4 cups cubed day-old sourdough bread

1 ½ cups sharp cheddar cheese, shredded

1 cup cooked bacon, crumbled (about 8 strips)

1 cup diced bell peppers (mix of colors for vibrancy)

½ cup diced green onions, plus extra for garnish

½ teaspoon smoked paprika (optional, for added depth)

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Generously grease a 9x13 inch baking dish with cooking spray or butter to prevent sticking.

Prepare the Egg Mixture: In a spacious mixing bowl, whisk the eggs, whole milk, salt, black pepper, garlic powder, onion powder, and smoked paprika (if using). Mix until the ingredients are fully combined and the mixture is smooth.

Layer the Ingredients: Evenly spread the cubed sourdough bread across the bottom of your greased baking dish. Scatter the crumbled bacon, diced bell peppers, and half of the diced green onions over the bread cubes, distributing them evenly.

Add Cheese: Sprinkle 1 cup of shredded sharp cheddar cheese over the top of the layered ingredients for a cheesy foundation.

Pour the Egg Mixture: Carefully pour the egg mixture over the entire casserole, ensuring all bread cubes are saturated with the egg mixture for optimal soaking.

Top with More Cheese: Finish by adding the remaining ½ cup of shredded cheddar cheese on top of the casserole for a delicious cheesy crust.

Let it Sit: Allow the assembled casserole to rest for 10-15 minutes at room temperature. This resting time lets the bread absorb the egg mixture for better texture.

Bake: Transfer the casserole into the preheated oven. Bake for 35-45 minutes, or until the center is set and the top is golden brown. A knife inserted in the center should come out clean when it’s done.

Cool and Serve: After baking, let the casserole cool for about 5-10 minutes. Slice into portions and garnish with the remaining diced green onions and chopped parsley, if desired.

Enjoy: Serve warm, pairing it with fresh fruit or a light green salad for a well-rounded breakfast experience!
