3 tablespoons olive oil

Salt and black pepper, to taste

1/4 cup pure maple syrup

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 cup pecans, roughly chopped (optional)

Fresh thyme sprigs, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with the olive oil, ensuring they are well-coated. Season with salt, black pepper, garlic powder, and smoked paprika, tossing everything together until fully mixed.

      Roast: Spread the seasoned Brussels sprouts in a single layer on the prepared baking sheet. Place them in the preheated oven and roast for about 20-25 minutes. Halfway through, give them a stir to promote even caramelization — they should be tender and golden by the end.

        Make the Maple Glaze: While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan set over medium heat, combine the maple syrup and balsamic vinegar. Bring this mixture to a gentle simmer, allowing it to cook for about 5 minutes. Stir occasionally to help it reduce and thicken slightly, then remove from heat.
