2 medium acorn squashes

1/4 cup pure maple syrup

3 tablespoons extra-virgin olive oil

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and black pepper, to taste

1/4 cup pecans, chopped (optional for added crunch)

Fresh thyme or parsley for garnish (optional for a pop of color)

Preheat Your Oven: Begin by preheating your oven to 400°F (200°C) so that it reaches the desired temperature by the time you're ready to roast.

    Prepare the Acorn Squash: Carefully slice each acorn squash in half from stem to tip. Use a spoon to scoop out the seeds and fibrous strands from the center to create a hollow cavity.

      Make the Seasoning Mixture: In a small mixing bowl, combine the pure maple syrup, extra-virgin olive oil, ground cinnamon, ground nutmeg, and a pinch of salt and black pepper. Whisk until well combined to create a smooth glaze.

        Coat the Squash: Generously brush the cut sides of the acorn squash halves with the maple syrup mixture, ensuring every bit of the flesh is covered for maximum flavor.

          Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the flesh is tender enough to be pierced easily with a fork.

            Glaze Again: Once the initial roasting time is complete, carefully flip the squash halves so they are cut-side up. Brush any remaining maple glaze generously over the cut surfaces once more, then return them to the oven.
