Ingredients

1 can (about 20 oz) young green jackfruit in water or brine, rinsed and drained

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (homemade or store-bought)

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

1 head of butter or iceberg lettuce, leaves carefully separated

Sliced avocado, for topping

Fresh cilantro, for garnishing

Lime wedges, for serving

Instructions

Prepare the Jackfruit: Start by draining and rinsing the jackfruit to remove excess brine. Use your hands or two forks to shred the jackfruit into bite-sized pieces, discarding any tough core sections. Set the shredded jackfruit aside for later use.

Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the finely chopped onion. Sauté for about 3-4 minutes, or until the onion becomes soft and translucent. Add the minced garlic and continue to sauté for another 1-2 minutes until it is fragrant.

Cook the Jackfruit: Incorporate the shredded jackfruit into the skillet with the onions and garlic. Stir the mixture to combine and let it cook for approximately 5 minutes, allowing the flavors to blend.

Add Spice and Sauce: Sprinkle in the smoked paprika, cayenne pepper (if desired), along with salt and pepper to taste. Pour in the BBQ sauce and stir thoroughly to ensure the jackfruit is fully coated. Bring the mixture to a simmer, then reduce the heat to low. Allow it to cook for an additional 10-15 minutes, stirring occasionally, until the jackfruit is heated through and the flavors have melded beautifully.

Assemble the Lettuce Bites: Take a fresh lettuce leaf and place a generous spoonful of the BBQ jackfruit mixture in the center. Top with slices of avocado for creaminess and finish with a sprinkle of fresh cilantro for a burst of color and flavor.

Serve: Squeeze a wedge of lime over each bite for a zesty kick. Serve immediately, and indulge in these delicious and refreshing BBQ bites!

              Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4-6

Presentation Tips: Arrange the filled lettuce leaves on a beautiful platter. You can add lime wedges around the platter for a pop of color and an easy way for guests to squeeze on extra lime juice as desired.
