1 tablespoon fajita seasoning (store-bought or homemade)

4 mini flatbreads (or substitute with mini pita breads)

1 cup shredded cheese (choose between Monterey Jack or sharp Cheddar)

1/4 cup fresh cilantro, chopped (for garnish)

Salsa and sour cream (optional, for serving)

Instructions
 

Marinate the Chicken: In a medium mixing bowl, combine the thinly sliced chicken breasts with the olive oil and fajita seasoning. Toss the chicken until each piece is well-coated in the marinade. Cover the bowl and let it marinate for at least 15 minutes, giving you time to prep the vegetables.

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set it aside on a plate.
