4 whole wheat pitas

1 cup cherry tomatoes, halved

1 cup cucumber, diced into small pieces

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced into rings

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Optional: 1/4 teaspoon garlic powder for an extra layer of flavor

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to prepare for toasting the pitas.

    Prepare the Pitas: Take each whole wheat pita and cut it into quarters, similar to slicing a pizza. Arrange these pita triangles evenly on a baking sheet.

      Toast the Pitas: Lightly brush the pita pieces with extra virgin olive oil, ensuring all sides are coated, and sprinkle a pinch of salt over them. Place the baking sheet in the preheated oven and toast for approximately 8-10 minutes, or until the pitas turn golden brown and crispy. Once done, remove from the oven and allow them to cool for a couple of minutes.
