1 cup turkey bacon, chopped into small pieces

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

1/4 teaspoon freshly ground black pepper

1/4 teaspoon garlic powder

Cooking spray or a drizzle of olive oil for greasing

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a standard muffin tin with cooking spray or a light drizzle of olive oil to ensure the egg cups don’t stick.

    Cook the Turkey Bacon: In a medium skillet, over medium heat, add the chopped turkey bacon. Cook it for about 5-7 minutes, or until crispy and browned. Once cooked, transfer the bacon to a paper towel-lined plate to absorb any excess grease.

      Prepare the Egg Mixture: In a large mixing bowl, crack all eight eggs and whisk them together until the yolks and whites are fully combined and frothy. Season the eggs with salt, black pepper, and garlic powder. Mix well to incorporate the seasonings evenly.
