Ingredients

2 medium apples, peeled and diced (Granny Smith or Honeycrisp recommended)

1 cup granulated sugar, divided

1/2 cup unsalted butter

1/2 cup heavy cream

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup crushed graham crackers

1/2 cup chopped pecans (or walnuts)

1 cup whipped cream (store-bought or homemade)

Caramel sauce for drizzling

Optional: a pinch of sea salt for garnish

Instructions

Prepare the Apple Filling:

    - In a medium mixing bowl, combine the diced apples, ground cinnamon, and 1 tablespoon of sugar. Toss until the apples are well coated in the cinnamon-sugar mixture. Set aside to let the flavors meld.

      Make the Caramel Sauce:

        - In a medium saucepan over medium heat, melt the unsalted butter completely. Once melted, add the remaining granulated sugar, stirring continuously until it transforms into a thick caramel-like paste.

          - Gradually pour in the heavy cream while whisking vigorously to create a smooth mixture. Allow the caramel sauce to simmer gently for about 2-3 minutes, thickening slightly.

            - Remove the pan from heat and stir in the vanilla extract. Let the caramel sauce cool slightly before using.

              Prepare the Graham Cracker Crust:

                - In another bowl, mix the crushed graham crackers and chopped pecans together. Drizzle in a couple of tablespoons of the cooled caramel sauce and mix until the crust mixture holds together when pressed.

                  Assemble the Cups:

                    - In small dessert cups or mason jars, start by adding a layer of the graham cracker crust mixture (about 2 tablespoons) at the bottom.

                      - Next, spoon in a layer of the diced cinnamon apples (approximately 1/4 cup).

                        - Drizzle about 1 tablespoon of caramel sauce over the apple layer.

                          - Add a generous dollop of whipped cream on top of the apples.

                            Repeat Layers:

                              - For a delightful texture and flavor, create another layer by adding more graham cracker crust, followed by the apple mixture, a drizzle of caramel sauce, and a topping of whipped cream. You should have a total of two layers of each component.

                                Garnish and Chill:

                                  - Finish by drizzling additional caramel sauce over the top of the cups. If desired, sprinkle a pinch of sea salt to enhance the flavors. Refrigerate the assembled cups for at least 1 hour to allow the flavors to meld beautifully.

                                    Serve:

                                      - Serve your chilled No-Bake Caramel Apple Pie Cups and enjoy! For a fun and attractive presentation, consider topping each cup with a slice of fresh apple or a sprinkle of cinnamon just before serving.
