Ingredients

1 cup rolled oats

1 cup mixed nuts (walnuts, almonds, and cashews), roughly chopped

1/2 cup pumpkin seeds

1/2 cup dried cranberries or raisins

1/2 cup chocolate chips or cacao nibs (optional for added sweetness)

1/2 cup creamy almond butter or peanut butter

1/3 cup honey or maple syrup for natural sweetness

1 teaspoon pure vanilla extract

A pinch of salt for flavor enhancement

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, chopped mixed nuts, pumpkin seeds, dried cranberries (or raisins), and chocolate chips (if opting for sweetness). Stir well until all ingredients are evenly distributed and mixed together.

Make the Sticky Mixture: In a small saucepan over low heat, combine the almond butter (or peanut butter), honey (or maple syrup), vanilla extract, and a pinch of salt. Stir continuously for about 2-3 minutes until the mixture becomes smooth and slightly warms, ensuring it does not reach a boiling point.

Combine: Carefully pour the warm sticky mixture over the dry ingredients in the mixing bowl. Use a spatula or wooden spoon to thoroughly combine and coat all the dry ingredients completely with the sticky mixture.

Press into the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easier removal later. Transfer the mixed ingredients into the dish and press them down firmly and evenly using your hands or the back of a spatula until they are compacted.

Chill: Place the dish in the refrigerator and allow it to chill for at least 1-2 hours, or until the mixture is firm enough to be cut into bars.

Cut and Serve: Once fully set, carefully lift the mixture out of the pan using the parchment paper overhang and transfer it to a cutting board. Slice into bars or squares of your desired size, perfect for snacking.

Store: Store the trail mix bars in an airtight container in the refrigerator for up to one week. You may also individually wrap them for grab-and-go snacks!
