Ingredients

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (white or brown variety)

2 cups beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of mushroom soup (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by setting your oven to preheat at 375°F (190°C). This ensures it's at the perfect temperature when you're ready to bake.

Brown the Beef: In a large, oven-safe skillet over medium heat, pour in the olive oil. Once hot, add the ground beef, using a wooden spoon to break it into smaller pieces. Cook for approximately 5-7 minutes, until the beef is browned. Season it with the garlic powder, onion powder, smoked paprika, as well as salt and pepper to taste for a flavor boost.

Add the Broccoli: Incorporate the broccoli florets into the skillet with the browned beef. Stir and cook for an additional 3-4 minutes, just until the broccoli begins to soften.

Mix in Rice and Liquid: Add the uncooked rice into the skillet, then follow with the beef broth and cream of mushroom soup. Mix all the ingredients thoroughly, ensuring the rice is evenly distributed throughout.

Simmer: Bring the mixture to a gentle simmer before lowering the heat. Allow it to cook for about 5 minutes, stirring occasionally, so that the rice can absorb some of the broth and flavors.

Cheesy Layering: Remove the skillet from heat and fold in 1 cup of the shredded cheddar cheese until it fully melts and blends into the mixture. Then, sprinkle additional cheddar cheese over the top for a deliciously gooey finish.

Bake: Transfer the skillet directly into the preheated oven and bake for 25-30 minutes, or until the rice has cooked through completely and the top is golden brown and bubbling with cheese.

Garnish and Serve: Once baked, allow the dish to rest for about 5 minutes before serving. Optionally, sprinkle freshly chopped parsley on top for a pop of color and freshness. Serve hot and indulge in your cheesy beef and broccoli bake!
