1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (frozen or canned)

2 cups shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon ground cumin

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

Cook the Ground Beef: In a large skillet or Dutch oven, heat the olive oil over medium heat. Once the oil is shimmering, add the ground beef.
