One-Pot Chicken Taco Macaroni

1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for added heat)

3 cups chicken broth

2 cups elbow macaroni

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (with juices)

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Season generously with salt and pepper. Once cooked, remove the chicken from the pot and set it aside on a plate.

    Sauté Aromatics: In the same pot, add the finely chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent and soft. Then, add the minced garlic and cook for an additional 30 seconds, stirring constantly until fragrant.

      Spice it Up: Sprinkle the ground cumin, chili powder, smoked paprika, and cayenne pepper (if using) over the onion and garlic mixture. Stir well and cook for another minute to allow the spices to release their flavors.
