Ingredients

2 large ripe avocados

4 slices of sourdough bread

1 cup freshly grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

1 tablespoon extra virgin olive oil

1 tablespoon fresh lemon juice

1/4 cup cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish

Instructions

Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the creamy flesh into a mixing bowl. Drizzle in fresh lemon juice to prevent browning, and add garlic powder, salt, and black pepper. Use a fork to mash the mixture until it’s creamy yet retains a bit of chunkiness. Set aside.

Preheat the Oven: Turn your oven on to the broil setting, allowing it to preheat on high.

Toast the Bread: Brush both sides of the sourdough bread slices with extra virgin olive oil for richness. Arrange the slices on a baking sheet and place them in the preheated oven. Toast for approximately 2-3 minutes per side, or until they achieve a lovely golden brown color. Keep a close watch to prevent burning.

Assemble the Toasts: After toasting, remove the bread from the oven. Generously spread the creamy avocado mixture over each slice of sourdough, ensuring an even coating all the way to the edges.

Add the Parmesan Crust: Sprinkle a hearty layer of freshly grated Parmesan cheese atop the avocado-covered toasts. For those who enjoy a bit of heat, feel free to add a sprinkling of red pepper flakes here.

Broil the Toasts: Return the baking sheet to the oven. Broil the toasts for about 3-5 minutes, watching closely until the cheese melts and becomes beautifully bubbly and golden, creating a delightful crust.

Garnish and Serve: Once the toasts are ready, carefully remove them from the oven and allow them to cool for a minute. Top each toast with halved cherry tomatoes and a few fresh basil leaves for an aromatic finish. Serve immediately while hot and enjoy!
