3 ripe peaches, pitted and diced

1 cup coconut milk (or your preferred milk)

1/2 cup Greek yogurt (optional for added creaminess)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

1 tablespoon freshly squeezed lemon juice

Prepare the Peaches: In a blender, combine the diced peaches, honey (or maple syrup), lemon juice, and a pinch of salt. Blend the mixture until it's smooth but retains some small chunks of fruit to give your pops a delightful texture.

    Make the Cream Mixture: In a separate bowl, whisk together the coconut milk, Greek yogurt (if using), vanilla extract, and a pinch of salt. Mix until the ingredients are smooth and fully incorporated.

      Layer the Pops: Take your popsicle molds and fill each one halfway with the peach puree. Use a spoon to gently press it down to ensure there are no air pockets.

        Add the Cream Layer: Carefully pour the cream mixture into each mold, filling them to about 3/4 full. Make sure you're not overfilling to allow space for the final peach layer.

          Complete the Pops: Top each mold with additional peach puree. Using a toothpick or skewer, gently swirl the mixtures together to create a marbled effect, which will enhance both the visual and taste experience.

            Insert Sticks: If your popsicle molds do not have built-in sticks, insert popsicle sticks into the center of each mold at this stage.
