2 cups all-purpose flour

1/2 cup almond flour

1/4 cup granulated sugar

1/2 cup buttermilk

1 large egg, beaten (for egg wash)

For the Pear Filling:

4 ripe pears, peeled, cored, and thinly sliced

1/4 cup brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter

For the Almond Cream:

1/2 cup almond paste

1/4 cup unsalted butter, softened to room temperature

1/2 teaspoon vanilla extract

1 large egg

1/4 cup powdered sugar

1 tablespoon all-purpose flour

For Serving:

Whipped cream or crème fraîche (optional)

Prepare the Pear Filling:

    - In a medium skillet, melt 1 tablespoon of butter over medium heat.

      - Once melted, add the sliced pears, brown sugar, ground cinnamon, and lemon juice.

        - Cook the mixture for approximately 5-7 minutes, stirring occasionally, until the pears are tender yet maintain their shape. Remove from heat and allow the filling to cool slightly.

          Make the Shortcake Dough:

            - Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

              - In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt until well combined.

                - Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the dry ingredients until the mixture resembles coarse crumbs.

                  - Pour in the buttermilk and vanilla extract. Stir gently until just combined – be careful not to overmix.

                    Shape the Shortcake:

                      - Lightly flour a clean surface and turn the dough out onto it. Gently knead the dough a few times until it comes together.

                        - Roll the dough to a thickness of about 1 inch. Using a round cutter (approximately 3 inches in diameter), cut out shortcake rounds and place them on the prepared baking sheet.

                            Bake the Shortcakes:

                                        Assemble the Dessert:

                                          - Once the shortcakes have cooled completely, slice each one in half horizontally.

                                            - On the bottom half of each shortcake, generously layer the prepared pear filling.

                                              - Spread a layer of the almond cream on top of the pear filling, then gently place the top half of the shortcake back on.
