1 cup orzo pasta

2 cups vegetable broth

1 cup pure pumpkin puree (avoid pie filling)

1/2 cup grated Parmesan cheese

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried sage

1/4 teaspoon ground nutmeg

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a medium saucepan, heat the 2 tablespoons of olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes or until it becomes translucent.
