Go Back
Historically, pumpkin spice has held a special place in culinary traditions. The combination of cinnamon, nutmeg, cloves, and ginger has roots that extend back centuries, often used in both sweet and savory dishes. Pumpkin itself has been a staple in American cooking since the early colonial days, where it was utilized not only for its flavor but also for its nutritional benefits. Today, pumpkin spice transcends its humble beginnings, becoming a beloved flavor profile that defines the fall season.

Ingredients

For the Crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

½ cup unsalted butter, melted

1 large egg yolk

1 teaspoon vanilla extract

For the Pumpkin Filling:

1 (15 oz) can pure pumpkin puree

¾ cup packed brown sugar

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

1 teaspoon vanilla extract

2 large eggs

1 cup sweetened condensed milk

For Topping (optional):

½ cup chopped pecans

Whipped cream, for serving

Instructions

Preheat the Oven:

    - Start by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it or lining it with parchment paper for easy removal after baking.

      Make the Crust:

        - In a medium mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Pour in the melted butter, then add the egg yolk and vanilla extract. Mix the ingredients together until a cohesive dough forms. Evenly press this dough into the bottom of the prepared baking dish. To prevent bubbling during baking, prick the surface with a fork.

          Bake the Crust:

            - Place the crust in the preheated oven and bake for 15 minutes, or until the edges are lightly golden. Once baked, remove from the oven and allow it to cool slightly while you prepare the filling.

              Prepare the Pumpkin Filling:

                - In a large mixing bowl, combine the pure pumpkin puree with packed brown sugar, ground cinnamon, nutmeg, ginger, cloves, and salt. Stir in the vanilla extract followed by the eggs, adding them one at a time and mixing thoroughly after each. Finally, add the sweetened condensed milk and mix until the filling is smooth and well combined.

                  Combine:

                    - Carefully pour the pumpkin filling over the pre-baked crust, using a spatula to spread it evenly. If you like a crunchy texture, sprinkle the chopped pecans on top of the filling.

                      Bake the Bars:

                        - Return the dish to the oven and bake for 30-35 minutes. The bars are done when the filling is set and a toothpick inserted in the center comes out clean. Let the bars cool in the baking dish for at least 1 hour before transferring them to the refrigerator to chill completely for an additional hour.

                          Slice and Serve:

                            - Once chilled, lift the bars out of the baking dish using the edges of the parchment paper, if used. Cut into squares or rectangles as desired. For an extra touch, serve each slice with a dollop of whipped cream on top.

                              Prep Time, Total Time, Servings:

                                - Prep Time: 20 minutes | Total Time: 1 hour 50 minutes | Servings: 12

Enjoy the warm flavors of fall with these delicious Pumpkin Spice Delight Bars!
