1 lb ground beef or ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (10 oz) diced tomatoes

1 packet taco seasoning (about 1 oz)

2 cups beef or vegetable broth

1 cup water

1 medium onion, diced

2 cloves garlic, minced

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado, or crispy tortilla chips

Instructions
 

Cook the Protein: In a large pot, heat over medium heat, add the ground beef or ground turkey. Cook for about 5-7 minutes, breaking the meat apart with a spatula until it’s nicely browned. If there’s excess fat in the pot, drain it to keep the soup from becoming greasy.

    Soften the Aromatics: Add the diced onion and minced garlic to the pot with the cooked meat. Sauté them together for about 3-4 minutes, or until the onion becomes soft and translucent.
