1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets, washed and trimmed

1 cup bell peppers (red and yellow), julienned

1 cup snap peas, trimmed and washed

3 cloves garlic, finely minced

1 inch fresh ginger, grated or minced

3 tablespoons soy sauce, divided

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 tablespoon sesame oil

1 teaspoon sugar

Salt and freshly ground pepper, to taste

Cooked rice or noodles, for serving

Optional: Sesame seeds and thinly sliced green onions for garnish

Marinate the Beef: In a mixing bowl, combine the thinly sliced beef with half of the soy sauce, cornstarch, grated ginger, sugar, and a generous pinch of salt and pepper. Mix thoroughly to ensure the beef is well coated. Let marinate for 10-15 minutes to enhance the flavors while you prepare the vegetables.

    Prepare the Vegetables: Rinse and chop the broccoli into bite-sized florets, julienne the bell peppers, and trim the ends of the snap peas. Set all the vegetables aside for quick access during cooking.

      Heat the Pan: In a large wok or heavy frying pan, heat 1 tablespoon of vegetable oil over high heat until it shimmers, indicating it’s hot enough for stir-frying.

        Stir-Fry the Beef: Carefully add the marinated beef to the pan in a single layer. Stir-fry for about 2-3 minutes, allowing the beef to brown and cook through. Once done, transfer the beef to a plate and set aside to keep warm.

            Combine and Sauce: Add the cooked beef back into the pan with the vegetables. Pour in the remaining soy sauce, oyster sauce, and sesame oil. Toss all the ingredients together and stir-fry for another 1-2 minutes, ensuring the sauce evenly coats everything and is heated through.
