Ingredients

2 cups cooked chicken, shredded or diced

1/2 cup creamy peanut butter

3 tablespoons low-sodium soy sauce

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil (optional)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1/2 cup red bell pepper, thinly sliced

1/4 cup chopped fresh cilantro or green onions

4 whole wheat or spinach wraps (8-inch)

1/4 cup chopped peanuts (for garnish)

Instructions

Prepare the Sauce: In a medium mixing bowl, combine the creamy peanut butter, low-sodium soy sauce, honey or maple syrup, rice vinegar, and optional sesame oil. Whisk together until the mixture is smooth and fully blended to create your delightful Thai peanut sauce.

Mix the Filling: In a large mixing bowl, add the cooked chicken. Pour half of the prepared peanut sauce over the chicken and toss to ensure every piece is evenly coated in the tasty sauce. Set aside the remaining sauce for later use.

Add the Veggies: Gently fold in the shredded carrots, thinly sliced cucumbers, sliced red bell peppers, and chopped cilantro or green onions into the chicken mixture. This step adds a vibrant crunch and freshness to your wraps!

Assemble the Wraps: Take a whole wheat or spinach wrap and lay it flat on a clean surface. Spoon a generous amount of the chicken and vegetable filling onto the center of the wrap, ensuring it’s well-distributed.

Wrap it Up: Carefully fold the sides of the wrap inward, then roll it tightly from the bottom up, ensuring the filling is securely enclosed within. Repeat this process for the remaining wraps.

Serve: Slice each wrap in half diagonally for easier handling, which is especially fun for kids! Drizzle the reserved peanut sauce over the tops of the wraps and finish with a sprinkle of chopped peanuts for an extra crunch.

Enjoy!: These wraps make a fantastic lunch option or a playful dinner for the whole family. Kids will not only enjoy the delicious flavors but also the fun of wrapping their own!
