1 lb ground turkey

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 medium onion, finely diced

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon olive oil

1 tablespoon Worcestershire sauce

1/2 cup chicken broth

Salt and freshly ground black pepper, to taste

1/2 cup shredded cheddar cheese (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Cook the Sweet Potatoes:

    In a large pot, fill with salted water and bring to a rolling boil over high heat. Add the cubed sweet potatoes and cook until they are fork-tender, about 15 to 20 minutes. Once done, drain the sweet potatoes and return them to the pot.

      Mash the Sweet Potatoes:

        To the drained sweet potatoes, add a pinch of salt and a drizzle of olive oil (or a small knob of butter). Using a potato masher or fork, mash the sweet potatoes until smooth and creamy. Set aside to allow the flavors to meld.

          Prepare the Turkey Filling:

            In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until it becomes translucent and tender, about 3 to 4 minutes. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

              Cook the Turkey:

                Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until the turkey is browned and fully cooked through, about 6 to 8 minutes. Drain any excess fat if necessary, ensuring a leaner filling.

                  Add Vegetables and Seasonings:
