Ingredients

1 medium spaghetti squash

6 cloves garlic, finely minced

3 tablespoons olive oil, divided

Salt and freshly cracked black pepper, to taste

1 teaspoon Italian seasoning (or a blend of dried oregano, basil, and thyme)

½ cup freshly grated Parmesan cheese

2 tablespoons freshly chopped parsley (for garnish)

Optional: Crushed red pepper flakes, for added heat

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This high temperature will help the squash roast perfectly.

Prepare the Spaghetti Squash: Using a sharp knife, carefully slice the spaghetti squash in half lengthwise. Take a spoon and thoroughly scoop out the seeds and any fibrous strands from the center to prepare the squash for roasting.

Season the Squash: Place the halved squash, cut-side up, on a baking sheet lined with parchment paper or aluminum foil for easy cleanup. Drizzle 1 tablespoon of olive oil evenly over the insides of each squash half. Generously season with salt, pepper, and the Italian seasoning blend to enhance the flavor.

Roast the Squash: Transfer the baking sheet to the preheated oven and roast the squash for approximately 40-45 minutes. It's ready when the flesh is tender and can be easily shredded into spaghetti-like strands using a fork.

Prepare the Garlic Oil: While the squash is roasting, heat 2 tablespoons of olive oil in a small saucepan over medium heat. Add the minced garlic and sauté for about 2 minutes, stirring frequently, until the garlic is fragrant but not browned, as burnt garlic can become bitter.

Mix with Cheese: After roasting, carefully remove the squash from the oven and let it cool slightly. Use a fork to scrape the flesh from the shells, creating the desired spaghetti-like strands. Transfer the strands to a mixing bowl and gently combine with the sautéed garlic oil and grated Parmesan cheese until well incorporated. Taste and adjust seasoning with more salt, pepper, or a sprinkle of crushed red pepper flakes for heat if desired.

Serve: Portion the garlic parmesan spaghetti squash into individual serving bowls. Garnish generously with chopped fresh parsley and a sprinkle of additional Parmesan cheese, if you like. Serve warm and savor the delicious flavors!
