Ingredients

1 lb fresh salmon fillet

1 ripe peach, diced

2 tablespoons honey

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon olive oil

1 garlic clove, minced

1 teaspoon fresh ginger, grated

1 head of butter lettuce or romaine, separated into leaves

1 small cucumber, julienned

1 carrot, julienned

Fresh cilantro or mint, for garnish

Salt and pepper to taste

Instructions

Prepare the Peach Glaze: In a small saucepan over medium heat, combine the diced peach, honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Cook while stirring occasionally until the peaches soften and the mixture thickens, approximately 8-10 minutes. Once done, remove from heat and allow it to cool slightly.

Cook the Salmon: Season the salmon fillet generously with salt and pepper. In a non-stick skillet, heat the olive oil over medium-high heat. When the oil is shimmering, place the salmon skin-side down in the skillet. Sear for about 4-5 minutes, then carefully flip the salmon and cook for an additional 3-4 minutes until fully cooked through and the fish flakes easily with a fork. Before removing from heat, drizzle half of the prepared peach glaze over the salmon, allowing it to soak in for about a minute.

Assemble the Lettuce Wraps: On a large serving platter, arrange the lettuce leaves. Flake the cooked salmon into bite-sized pieces and distribute evenly among the leaves. Top each portion of salmon with julienned cucumber and carrot. Finish with a sprinkle of fresh cilantro or mint for an aromatic touch.

Finish with Glaze: Drizzle the remaining peach glaze generously over the assembled wraps to enhance the flavor and visual appeal.

Serve Immediately: Present your vibrant and fresh salmon lettuce wraps as a delightful meal or appetizer. Enjoy the explosion of flavors!
