For the Salmon:

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and black pepper, to taste

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup fresh blueberries

1/4 cup grated carrots

1/4 cup red onion, thinly sliced

1 tablespoon fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and black pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Sliced avocados (optional)

Additional cilantro leaves for garnish

Instructions

Prepare the Salmon:

    - Begin by preheating your grill or oven to 400°F (200°C).

      - Rinse the salmon fillet under cold water and gently pat it dry with paper towels. Brush the top and sides with olive oil for added flavor and moisture.

        - In a small mixing bowl, combine smoked paprika, garlic powder, ground cumin, salt, and black pepper. Stir the spices together and rub this mixture evenly over the salmon fillet to coat it well.

          Cook the Salmon:

            - If grilling: Carefully place the salmon on the preheated grill; cook for about 6-8 minutes on each side or until the salmon flakes easily with a fork.

              - If baking: Line a baking sheet with parchment paper and place the salmon skin-side down. Bake for approximately 12-15 minutes or until cooked through and opaque.

                Make the Blueberry Slaw:

                  - In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, grated carrots, fresh blueberries, thinly sliced red onion, and chopped cilantro.

                    - In a separate small bowl, whisk together apple cider vinegar, honey, a pinch of salt, and black pepper until well combined. Pour this dressing over the slaw mixture and toss gently to coat all ingredients evenly. Allow the slaw to sit for a few minutes to let the flavors meld together.

                      Warm the Tortillas:

                        - To warm the tortillas, heat a skillet over medium heat. Place each tortilla in the skillet for about 30 seconds on each side, or until they are warmed through and pliable.

                          Assemble the Tacos:

                            - Once the salmon is cooked, use a fork to flake it into bite-sized pieces.

                              - To assemble your tacos, place a generous scoop of flaked salmon on each tortilla. Top with a generous amount of blueberry slaw and add sliced avocados if desired. Finish with a sprinkle of additional cilantro leaves for a pop of color and freshness.

                                Serve:

                                  - Present the tacos on a platter with lime wedges on the side for a fresh squeeze of lime juice to enhance the flavors. Enjoy your colorful and delicious Salmon Tacos with Blueberry Slaw!
