Ingredients

1 lb chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into thin strips

1 cup broccoli florets

1 medium carrot, julienned

1 zucchini, sliced into half-moons

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped (for garnish)

Sesame seeds (for garnish, optional)

Instructions

Marinate the Chicken: In a medium-sized mixing bowl, combine the thinly sliced chicken breast, soy sauce, oyster sauce, and cornstarch. Stir well to ensure all pieces are evenly coated with the marinade. Cover the bowl with plastic wrap and let it marinate for at least 15 minutes. For deeper flavor, marinate for up to an hour.

Prepare the Vegetables: While the chicken is marinating, wash and chop the vegetables according to the specifications. This prep work helps streamline the cooking process, allowing everything to cook quickly and evenly.

Heat the Pan: Place a large skillet or wok over medium-high heat, adding 1 tablespoon of vegetable oil. Allow the oil to heat until it shimmers, indicating that it's ready for cooking.

Cook the Chicken: Carefully add the marinated chicken into the hot skillet in a single layer. Cook without stirring for the first 3 minutes to develop a nice sear, then stir occasionally for another 2-4 minutes. The chicken is done when it's thoroughly cooked through and a light golden color appears. Once cooked, remove the chicken from the pan and transfer it to a plate.

Stir-Fry the Vegetables: In the same skillet, pour in the remaining tablespoon of oil. Add the minced garlic and grated ginger to the hot oil, sautéing for about 30 seconds or until aromatic but not browned. Immediately add the sliced red bell pepper, broccoli florets, julienned carrot, and sliced zucchini. Stir-fry the mixture for about 4-5 minutes, just until the vegetables are bright in color and tender-crisp.

Combine Chicken and Vegetables: Return the cooked chicken to the skillet with the vegetables, tossing everything together. Allow it to cook for an additional 2 minutes, ensuring that the chicken is heated through and the flavors meld beautifully.

Garnish and Serve: Remove the stir-fry from heat and garnish it with chopped green onions and a sprinkle of sesame seeds, if desired. Serve this delectable stir-fry hot over steamed rice or cooked noodles for a wholesome meal.
