1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup carrots, peeled and diced

1 cup potatoes, peeled and diced

1 cup green peas, fresh or frozen

1 cup celery, diced

1 medium onion, finely diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup chicken broth (low-sodium recommended)

1 cup heavy cream

3 tablespoons all-purpose flour

Salt and pepper, to taste

1 egg, beaten (for egg wash)

1 package (14 ounces) puff pastry sheets, thawed according to package instructions

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning generously with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is lightly browned and cooked through. Use a slotted spoon to remove the chicken from the skillet and set it aside in a bowl.

    Sauté the Vegetables: In the same skillet, add the diced onion, minced garlic, and diced celery. Sauté for about 2-3 minutes until the onions become translucent. Next, add the carrots and potatoes, continuing to cook for an additional 5 minutes, stirring frequently.

      Make the Sauce: Sprinkle the flour evenly over the sautéed vegetables, stirring to ensure they are well-coated. Gradually pour in the chicken broth and heavy cream while stirring continuously to prevent lumps. Add the dried thyme and rosemary, then bring the mixture to a gentle simmer.
