1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika for depth

1/2 teaspoon freshly ground black pepper

1 teaspoon salt (adjust to taste)

1 tablespoon olive oil

1 cup crushed cornflakes (optional, for added crunch)

1 tablespoon fresh parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures it’s hot enough to bake the casserole evenly.

    Prepare the Potatoes: In a large pot, add enough water to cover the diced potatoes and bring it to a rolling boil. Carefully add the diced potatoes and cook for about 10 minutes until they are fork-tender but still firm. Drain the potatoes thoroughly in a colander and set aside to cool slightly.

      Sauté the Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes or until it turns translucent. Stir in the minced garlic and sauté for an additional 1 minute until fragrant—be careful not to burn the garlic.

        Mix the Filling: In a large mixing bowl, combine the cooked and cooled potatoes, diced ham, sautéed onions and garlic, shredded cheddar cheese, sour cream, milk, dried thyme, smoked paprika, black pepper, and salt.
