Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

3 cloves garlic, minced

Juice of 2 lemons (about 1/4 cup)

Zest of 1 lemon

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

Fresh parsley, chopped (for garnish)

For Lemon Salsa:

1 cup cherry tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Sea salt and freshly ground black pepper to taste

Instructions

Marinate the Shrimp: In a medium bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, sea salt, and black pepper. Add the peeled and deveined shrimp, ensuring they are well coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse, or up to 1 hour for a more intense flavor.

Prepare the Lemon Salsa: While the shrimp is marinating, prepare the fresh salsa. In a mixing bowl, combine the diced cherry tomatoes, finely chopped red onion, diced jalapeño, and chopped cilantro. Squeeze the lime juice over the mixture and season with sea salt and freshly ground black pepper to taste. Stir everything together and set aside to let the ingredients meld for at least 10 minutes.

Preheat the Grill: Preheat your grill to medium-high heat. If you're using wooden skewers for the shrimp, soak them in water for at least 30 minutes beforehand to prevent them from burning during grilling.

Skewer the Shrimp: After marinating, take the shrimp out of the refrigerator. Carefully thread the marinated shrimp onto the skewers, placing about 4-5 shrimp per skewer, ensuring they are spaced evenly for thorough cooking.

Grill the Shrimp: Place the shrimp skewers on the preheated grill. Cook them for approximately 2-3 minutes on each side, or until the shrimp have turned opaque and are cooked through. Once done, remove the skewers from the grill and set them aside.

Serve: Arrange the grilled shrimp skewers beautifully on a serving platter. Generously spoon the vibrant lemon salsa over the skewers, and finish with a sprinkle of freshly chopped parsley for color. Serve warm and enjoy the burst of flavors!
