Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 lemon, zested and juiced

4 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Asparagus: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the asparagus pieces. Sauté for about 5-7 minutes, stirring occasionally, until the asparagus turns a vibrant green and achieves a tender-crisp texture. Season generously with a pinch of salt and freshly ground black pepper. Once done, remove the asparagus from the skillet and transfer it to a plate. Set aside.

Cook the Shrimp: In the same skillet, add the remaining 2 tablespoons of olive oil. Heat the oil until it's hot and shimmering, then add the minced garlic and red pepper flakes. Sauté for about 30 seconds until the garlic becomes fragrant, ensuring it doesn’t burn.

Add the Shrimp: Immediately incorporate the shrimp into the skillet, spreading them out in a single layer. Cook without stirring for about 2-3 minutes, or until the shrimp turn pink and opaque on one side. Carefully flip the shrimp and continue cooking for an additional 2-3 minutes until fully cooked through and opaque.

Combine Ingredients: Once the shrimp are perfectly cooked, reintroduce the sautéed asparagus back into the skillet. Pour in the fresh lemon juice and add the lemon zest. Using a spatula, gently toss all the ingredients together until they are evenly mixed, allowing the flavors to harmonize. Taste the mixture and adjust the seasoning if necessary with more salt, pepper, or lemon juice, according to your liking.

Serve: Remove the skillet from heat and sprinkle freshly chopped parsley over the top for a burst of color and freshness. Serve the dish immediately. It pairs wonderfully with warm, crusty bread, or can be served over a bed of fluffy rice or pasta for a delightful and satisfying meal.
