Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 cup all-purpose flour

2 large eggs

1 cup Italian-style breadcrumbs

½ cup grated Parmesan cheese, divided

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

2 cups marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

Olive oil, for frying

Instructions

Prep the Chicken: Begin by placing the chicken breasts between two pieces of plastic wrap. Using a meat mallet, gently pound the chicken to an even thickness of about ½ inch. This ensures even cooking. Season both sides liberally with salt and pepper to enhance flavor.

Set Up Breading Station: Create a breading assembly line with three shallow dishes: one filled with all-purpose flour, the second containing beaten eggs, and the third with a mixture of breadcrumbs, ¼ cup of Parmesan cheese, garlic powder, oregano, and red pepper flakes (if using).

Bread the Chicken: Taking one chicken breast at a time, dredge it in the flour, ensuring to shake off any excess. Next, dip it into the beaten eggs, letting any stray egg run off. Finally, coat the chicken with the breadcrumb mixture, pressing down lightly to ensure the crumbs stick well.

Cook the Chicken: In a large skillet, heat 2-3 tablespoons of olive oil over medium heat. Once the oil is shimmering, carefully place the breaded chicken breasts in the skillet. Cook for 4-5 minutes on each side or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Once done, transfer the chicken to a plate and cover with aluminum foil to keep warm.

Prepare the Marinara Sauce: Without cleaning the skillet, pour in the marinara sauce, scraping up any flavorful bits left from the chicken. Stir the sauce and let it simmer for 3-4 minutes to infuse the flavors.

Assemble the Dish: Return the cooked chicken to the skillet, setting it on top of the marinara sauce. Spoon some sauce over each piece of chicken. Sprinkle the remaining ½ cup of shredded mozzarella cheese and ¼ cup of grated Parmesan cheese over the top.

Melt the Cheese: Cover the skillet with a lid and reduce the heat to low. Cook for 3-5 minutes, or until the cheese has melted and is beautifully bubbling.

Serve: Remove from heat and garnish with fresh basil leaves for a pop of color and flavor. Serve the chicken hot, with extra marinara sauce on the side. This dish pairs wonderfully with a side of pasta, crusty bread, or a fresh garden salad to complete your meal.
