4 boneless, skinless chicken breasts

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup cream of mushroom soup (store-bought or homemade)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 teaspoon olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Start by seasoning the chicken breasts generously with salt, pepper, paprika, and dried thyme. In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully add the chicken breasts. Sear them for about 3-4 minutes on each side, or until they develop a beautiful golden-brown crust. Once seared, remove the chicken from the skillet and set it aside on a plate.

    Sauté the Vegetables: In the same skillet with the remaining oil, add the finely chopped onion and minced garlic. Sauté the mixture for about 2-3 minutes, stirring frequently, until the onion becomes translucent and releases its fragrant aroma.

      Combine Ingredients in Slow Cooker: Take a slow cooker and add the uncooked rice, chicken broth, cream of mushroom soup, sautéed onions, and the frozen peas and carrots mix.
