Ingredients

2 pounds ground beef

1 large onion, diced

3 cloves garlic, minced

1 bell pepper, diced (choose red or green for sweetness)

2 cans (14.5 oz each) diced tomatoes, undrained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 cup corn (can use fresh, frozen, or canned)

1/2 cup BBQ sauce (select your favorite brand)

2 tablespoons chili powder

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for a spicy kick)

1 tablespoon Worcestershire sauce

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream and shredded cheese (for serving, optional)

Instructions

Brown the Beef: In a large skillet over medium-high heat, add the ground beef. Cook until it is browned and no longer pink, about 6-8 minutes. Drain any excess fat, then transfer the beef to the slow cooker.

Sauté the Vegetables: In the same skillet, add a small splash of olive oil if necessary. Sauté the diced onion, minced garlic, and bell pepper until softened, approximately 5-7 minutes. Once cooked, add the mixture to the slow cooker with the beef.

Combine Everything: To the slow cooker, add the undrained canned diced tomatoes, kidney beans, black beans, corn, BBQ sauce, chili powder, ground cumin, smoked paprika, salt, black pepper, cayenne pepper (if using), and Worcestershire sauce. Stir everything thoroughly until well combined.

Slow Cook the Chili: Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. If possible, stir the chili occasionally to help blend the flavors, though it’s not essential.

Taste and Adjust Seasonings: About 30 minutes before you plan to serve the chili, take a moment to taste it. Adjust the flavors as needed; you can add more BBQ sauce for sweetness or extra spices for more heat based on your preference.

Serve the Chili: Once the cooking time is complete, ladle the hot chili into bowls. Garnish generously with chopped cilantro. For an added touch, top each bowl with a dollop of sour cream and a sprinkle of shredded cheese for extra creaminess.

Enjoy Your Dish: Serve the chili piping hot alongside crusty bread, cornbread, or tortilla chips for dipping. This filling meal is perfect for gatherings or a cozy night in!
