Ingredients

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups elbow macaroni (or any pasta of your choice)

3 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened to room temperature

1 cup milk (whole or 2% recommended for creaminess)

1/2 cup hot sauce (like Frank's RedHot; adjust according to your spice preference)

1 teaspoon Dijon mustard

1/2 teaspoon onion powder

1 cup Panko breadcrumbs

2 tablespoons unsalted butter, melted

Fresh chives or parsley, finely chopped for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until all the florets are evenly coated. Spread the seasoned cauliflower out in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for approximately 20 minutes, or until the florets are tender and have a slightly charred appearance, flipping them halfway through the cooking time for even roasting.

Cook the Pasta: While the cauliflower is roasting, bring a pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Once cooked, drain the pasta and set aside.

Make the Cheese Sauce: In a large saucepan over medium heat, combine the softened cream cheese and milk. Stir continuously until the cream cheese has melted and is fully blended into the milk. Gradually incorporate the shredded sharp cheddar cheese, stirring consistently until the cheese has melted and the sauce is smooth and creamy.

Add Flavor: To the cheese sauce, mix in the hot sauce, Dijon mustard, and onion powder. Stir until the ingredients are fully combined. Gently fold in the cooked macaroni followed by the roasted cauliflower, ensuring everything is evenly mixed.

Prepare the Topping: In a small bowl, combine the Panko breadcrumbs with the melted butter, mixing them until the breadcrumbs are fully coated and ready for sprinkling.

Assemble & Bake: Pour the creamy mac and cheese mixture into a greased 9x13-inch baking dish, spreading it out evenly. Evenly distribute the Panko topping over the top of the macaroni and cheese. Place the dish in the oven and bake for about 25-30 minutes, or until the mixture is bubbly and the topping turns a beautiful golden brown.

Serve: Once baked, remove the dish from the oven and allow it to cool slightly. Garnish your fiery buffalo cauliflower mac and cheese with a sprinkle of freshly chopped chives or parsley for a pop of color before serving. Enjoy this delicious and spicy twist on a classic comfort dish!
