2 cups fresh strawberries, hulled and quartered

1 cup freshly squeezed lemon juice (from approximately 4-6 lemons)

1 cup granulated sugar

1 cup water

Zest from 2 lemons

A pinch of salt

Prepare the Strawberries: In a blender, combine the quartered strawberries with 1/4 cup of the granulated sugar. Blend until the mixture is completely smooth and homogenous. To remove the seeds, strain the blended strawberry puree through a fine-mesh sieve into a bowl. Discard the seeds and set the smooth puree aside.

    Create the Lemonade Base: In a small saucepan, combine the remaining 3/4 cup of sugar, 1 cup of water, and a pinch of salt. Heat the mixture over medium heat while stirring occasionally, until the sugar is completely dissolved and the mixture is clear. Once dissolved, remove the saucepan from the heat and allow it to cool slightly at room temperature.

      Combine Ingredients: In a large mixing bowl, combine the smooth strawberry puree, freshly squeezed lemon juice, lemon zest, and the cooled sugar-water mixture. Stir everything together thoroughly until fully combined. Taste your mixture and adjust the sweetness to your liking by adding more sugar if needed.

        Chill the Mixture: Cover the mixing bowl with plastic wrap or a lid, and refrigerate the mixture for 1-2 hours, or until completely chilled. This step is essential for achieving a smoother texture in your sorbet once frozen.
