Ingredients

12 large cremini or button mushrooms, stems removed

8 oz cream cheese, softened to room temperature

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh chives, finely chopped

1 tablespoon fresh thyme leaves, chopped

2 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (optional, for a spicy kick)

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

1/4 cup seasoned breadcrumbs (for added crunch)

Instructions

Preheat the Oven: Set your oven temperature to 375°F (190°C) to preheat while you prepare the mushrooms.

Prepare the Mushrooms: Gently clean the mushrooms using a damp cloth to remove any dirt. Carefully remove the stems and set them aside. Finely chop the mushroom stems to incorporate into the filling later.

Make the Filling: In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, chopped parsley, chives, thyme, minced garlic, and the finely chopped mushroom stems. If you like a bit of heat, add the crushed red pepper flakes. Season the mixture with salt and freshly ground black pepper to your taste, then blend until the filling is creamy and well combined.

Stuff the Mushrooms: Using a small spoon or a piping bag, fill each mushroom cap generously with the cream cheese filling. Aim to create a slight mound on top of each mushroom for a pleasing presentation.

Prepare for Baking: Arrange the stuffed mushrooms on a baking sheet lined with parchment paper for easy cleanup. Lightly drizzle olive oil over the tops of the stuffed mushrooms, enhancing their flavor and helping them brown beautifully.

Add Crunch: If you’d like an extra layer of texture, sprinkle seasoned breadcrumbs over each stuffed mushroom for a delightful crunch.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes. The mushrooms should be tender, and the tops should achieve a lovely golden brown color.

Serve: Once baked, remove the mushrooms from the oven and allow them to cool for a few minutes. For an added touch, garnish with a sprinkle of fresh herbs before serving.
