2 medium zucchinis, grated and excess moisture squeezed out

1 cup of frozen or fresh corn kernels

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/2 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon baking powder

Salt and black pepper to taste

Oil for frying (vegetable or olive)

Sour cream or yogurt for serving (optional)

Prepare the Zucchini: Start by placing the grated zucchini into a large mixing bowl. Sprinkle a pinch of salt over it and let it rest for about 10 minutes. This process will help to extract excess moisture from the zucchini. After 10 minutes, wrap the zucchini in a clean kitchen towel and firmly squeeze to remove as much liquid as possible.

    Mix Ingredients: In the same bowl with the prepared zucchini, add in the corn kernels, all-purpose flour, cornmeal, eggs, grated Parmesan cheese, chopped green onions, chopped cilantro, garlic powder, smoked paprika, baking powder, and season generously with salt and black pepper. Using a spatula or spoon, stir all the ingredients together until they are well combined and form a cohesive batter.

      Heat Oil: Pour about 1/4 inch of oil into a large skillet and heat it over medium heat. To check if the oil is hot enough, drop a small spoonful of the fritter mixture into the oil. If it sizzles immediately, the oil is ready for frying.

        Form Fritters: Using a tablespoon or an ice cream scoop, carefully portion out the mixture and gently drop it into the hot oil.
